Banana Bread Recipe–YUM!

I got this years ago from a little old lady that worked in my office. I have had it for almost 15 years and pull it out when I have some over-ripe bananas on the counter.

3 ripe bananas
1/2 cup vegetable oil
1 cup sugar
2 eggs
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 up walnuts, chopped (optional, I don’t personally put these in my bread)

1. Preheat the oven to 325 degrees and spray loaf pan (I usually split out to 2 loaf pans or make some muffins and a loaf), that way it doesn’t get so brown to get cooked in the middle.

2. Place ripe bananas in bowl and mash with fork slightly, add vegetable oil, sugar and eggs. Beat together until smooth.

3. Mix all the dry ingredients together then slowly and add to other mixture until it is all well combined, fold in vanilla (and nuts if you are adding).

4. Then pour into loaf pan(s) and bake for appr 50 minutes or until skewer/toothpick comes out clean.

  1. Banana bread it always a hit at my house! Sometimes when I don’t have time to make it with the over-ripe bananas I put them in the freezer. Now that I am making lots of smoothies it seems like our over-ripe bananas go into smoothies and I rarely make the bread.
