Chicken Recipe Ideas–A week’s worth of ideas

Boneless, Skinless Chicken Breast was on sale at Publix for 1.99 lb last week, we picked up 4 packages and froze in meal servings in ziploc bags, now we have some chicken, here come the recipes.

Chicken Fried Rice–I get the sunbird yellow package Chicken Fried Rice Mix and add mixed vegetables and chicken, makes a great chinese take out subsitute.

KFC Night—that is what we call it, I take chicken, scramble an egg, dip chix strips or breast(make sure it is the same thickness all the way through) into egg, then into bread crumbs, no bread crumbs, crush stove top stuffing with rolling pin and use, cook in just a little oil in a pan.  Then make some mashed potatoes, can of gravy and some frozen vegetables.

Gooey Cheesy Chix Casserole–I usually make this with Canned chicken ( I stock up on this when there is a sale and load my pantry), you can also make with cooked chicken breast.  Cook noodles, make 2-3 hard boiled eggs–and chop, add can of cream of chix or mushroom soup, 1/2 cup of mayo and mix, if dry add more mayo, if too thick add some milk, onion if you like it, salt and pepper to taste, I add seasoning salt and garlic salt to most of my recipes.  Mix put in casserole dish throw some cheese on top and warm in oven.

Chix and rice–Cook rice, add a can of cream of Mush soup, some chopped up chicken, season to taste.

Chix and yellow rice.   Get a bag of yellow rice, cook as directed, throw in some cut up chicken.  You can add to the meal a can of black beans if you like them.  I like them…husband doesn’t.

Chicken Alfredo–get bow tie pasta, any type of pasta you like.  Get a jar of Alfredo from pantry (stock up when there is a BOGO sale), add some brocolli if you like and throw a salad on the side.

Chicken Salad Sandwiches–I usually use canned chicken again, but you can use chopped up chicken breast.  Mix with mayo and dill pickle relish eat on toast or crackers for a snack.

Yes – similar to your “KFC” chicken, my kids call it “cracker chicken”, roll chicken in egg but then coat with ritz cracker crumbs, lay in a pam sprayed pan and then top with a pat of butter on each breast. Cook at 350 for approx 40 – 45 min, depending on size of breasts! DELICIOUS, and my kids EAT IT ALL UP!!! A great stand by and Publix FREQUENTLY has Ritz crackers as a BOGO which is when I stock up on them! Serve w/ brown rice & green beans or mashed potatoes, or mac & cheese – and it’s sure to be a hit w/ the kids!
    Anyone I have ever given this recipe to LOVES it!!
