A quick Black Bean Soup recipe

The recipe section seems to be of interest, I guess when we are eating in more we have to come up with new things/ideas. Figured I would add to the list since I made this for a quick lunch yesterday.

Black Bean Soup
1 can of chicken broth, cheaper if you have chix stock and make own broth
1 can black beans
1 can tomatoes, good if you get with onion but plain is fine (or the mexican flavor tomatoes)
1 small can of tomatoe paste (I don’t do this, I just put less chicken stock in and let it simmer if I want it thicker)

Dump the 3 cans in pot, if you have a hand blender whip it up a little to break down the beans, if you don’t have hand blender you can just mash the beans up a bit or through mixture in blender. Let simmer to get thicker if you want. I sometimes like it more brothy and drink it out of a mug, if it is cold out. It is also very low cal-low fat. If you have extra chicken breast you can cut it up and put in. Also if you like it more zeste, you can add some salsa to it.

For a full meal serve with yellow rice and salad/fruit. If you do this, start your rice first because it takes longer than putting the soup together.
